പച്ചക്കറികളിലും മാംസത്തിലും അടങ്ങിയിരിക്കുന്ന ജലത്തിൽ ലയിക്കുന്ന തരം ജീവക (പ്രോട്ടീൻ)മാണ്‌ തയാമിൻ - (Thiamine). സാധാരണയായി ബി-കോപ്ലക്സ് വിറ്റാമിനുകൾ എന്ന വിഭാഗത്തിലെ ഉൾപ്പെടുന്നതാണെങ്കിലും ഇതേ വിഭാഗത്തിലെ മറ്റ് വൈറ്റമിനുകളുമായി രാസപരമായ സാദൃശ്യമൊന്നുമില്ല. കരളാണ്‌ ഏറ്റവും നല്ല തയാമിൻ സ്രോതസ്സ്. തയാമിന്റെ അഭാവം മൂലം മനുഷ്യർക്കുണ്ടാകുന്ന രോഗമാണ്‌ ബെറിബെറി - (beriberi).അതിനാൾ തയാമിനെ ആന്റി ബെറിബെറി ഘടകം എന്നു പറയുന്നു. തയാമിന്റെ പഴയ പേരാണ്‌ അന്യൂറിൻ - (aneurine).^[1]
