ഇംതിയാസ് ഖുറേശി
ഇന്ത്യയിലെ പേരുകേട്ട ഒരു പാചകവിദഗ്ദനാണ് ഇംതിയാസ് ഖുറേശി. ഐ.ടി.സി ഹോട്ടൽ ശൃംഖലയിലെ മാസ്റ്റർ ചെഫ് ആയ ഇംതിയാസ്, ദം പുഖ്ത് പാരമ്പര്യത്തെ പുനരുജ്ജീവിപ്പിച്ചവരിൽ പ്രമുഖനാണ്.[1][2] ഇന്ത്യൻ പ്രധാനമന്ത്രിമാരും പ്രസിഡന്റുമാരും ആതിധേയത്വം വഹിച്ച നിരവധി ഔദ്യോഗികവിരുന്നുകളിൽ അദ്ദേഹം പ്രവർത്തിച്ചിട്ടുണ്ട്.[3]
ജീവിതരേഖ[തിരുത്തുക]
1931-ൽ ഉത്തർപ്രദേശിലെ ലഖ്നോവിൽ ഇംതിയാസ് ജനിച്ചു[4]. കുടുംബാംഗങ്ങൾ പാചകകല ജീവനോപാധിയാക്കിയവരായിരുന്നു. അമ്മാവന്റെ കൂടെ തന്റെ പാചകജീവിതമാരംഭിച്ച ഇംതിയാസ് ഖുറൈശി, പിന്നീട് ഇന്ത്യൻ സേനയിലേക്ക് കാറ്ററിങ് നടത്തുന്ന കൃഷ്ണ കാറ്റെറേഴ്സിൽ ചേർന്നു[5]. ഏതാനും റെസ്റ്റോറന്റുകളിലെ ജോലിക്ക് ശേഷം 1979-ൽ അദ്ദേഹം ഐ.ടി.സി ഹോട്ടൽസിൽ പ്രവർത്തനമാരംഭിച്ചു. അവിടെ മാസ്റ്റർ ചെഫ് ആകുന്നതിന് മുൻപുള്ള കാലം ഐ.ടി.സി യുടെ പല ഹോട്ടലുകളിലും ജോലി ചെയ്തു.[6]
ഇന്ത്യൻ സർക്കാർ നൽകുന്ന പത്മശ്രീ പുരസ്കാരം, അദ്ദേഹം പാചകകലക്ക് നൽകിയ സംഭാവനകൾ പരിഗണിച്ച് 2016-ൽ നൽകുകയുണ്ടായി[7]. ഈ ബഹുമതി ലഭിക്കുന്ന ആദ്യത്തെ പാചകക്കാരൻ എന്ന പ്രത്യേകത കൂടി ഇദ്ദേഹത്തിനുണ്ട്.[4]
